At Revolt Fitness we know what it feels like when your sweet tooth craves a dessert you know is really bad for you. Especially around the holidays when most people are not eager to bake something that has "paleo" in the title, it is hard to stay on a healthy track. Here is one easy recipe you can follow to satisfy that craving. These 'cups' will "WOW" anyone you decide to share with or you can be sneaky and keep them all to yourself! Luckily for Omar I decided to share. He loves his desserts with ice cream so I added 2 scoops of Halo Top Vanilla Bean ice cream.
1 bag (10 oz) dark chocolate chips
3/4 cup raw almond butter (or cashew butter)
1/3 cup raw unfiltered honey (this can be reduced as it is pretty sweet already)
1 teaspoon vanilla (or caviar from 1 scraped vanilla bean)
1 tablespoon sea salt flakes (like Maldon™)
*you can also add a few coconut flakes if that is your thing, make it yours!
Special equipment: parchment or silicone cupcake liners
1. Line a 12-cup muffin tin with cupcake liners. Set aside.
2. In a microwave-safe bowl, microwave chocolate chips in 30-second bursts, stirring between, until smooth. Drizzle 2-3 teaspoons of chocolate into the bottom of each cup, just enough to cover the bottom with chocolate.
3. In a medium-sized bowl, mix together almond butter, honey and vanilla. Drop 1 heaping tablespoon into the center of each chocolate-filled cup.
4. Rap muffin tin against table several times to even out the almond butter filling. Cover with chocolate, sprinkle with sea salt. Allow chocolate to harden before serving. Refrigerate for 10-20 minutes to speed up the hardening process, if desired.
